Simple Sponge/Pound Cake
INGREDIENTS:
Maida - 100 gms
Powdered sugar - 100 gms
Baking powder - 1/2 tsp
Butter - 113 gms
Eggs - 2
Vanilla essence - 1 tsp
Honey - 1 tsp
Milk - 1/2 tbsp
METHOD:
1. In a bowl mix, maida, powdered sugar and baking powder.
2. Mix gently the butter (room temperature, not melted) in to the mixture. Set it aside.
3. In a separate bowl, add the eggs, essence, honey and beat well till light and fluffy.
4. Add the maida mixture to the egg mixture and mix well using a whisk.
5. Finally add milk to the mixture.
6. Pour the batter into a greased and lined baking pan.
7. Bake it in a pre-heated oven @ 180 ° for 25-30 mins.
My Notes:
1. I used 2 small sized loaf pans for this measurement.
2. You may add a dash of ghee to enhance the flavour - (110 gms Butter + 3 gms Ghee).
